Banana Oat Waffles

If you follow me over on Instagram (@BrittanyLerbakken) or Facebook, you can see that I have been on a waffle kick. Lucky for me, the meal plan I follow with Hammer and Chisel allows for them. These waffles are incredible and honestly don’t even need any toppings – they are so flavorful all by themselves! I personally have been topping mine with 2 teaspoons of natural peanut butter and serving them alongside two eggs! My husband enjoys adding half a banana. One thing I love about these is that I can make a batch for the whole week and then just pop them in the toaster on my way out the door!

Banana Oat Waffles

Serves 4

Gather Up:

  • 2 cups of rolled oats (gluten free if you prefer!)
  • 1 cup of unsweetened almond milk
  • 1.5 tsp of pure vanilla extract
  • 2 large eggs
  • 1 large banana
  • 1 tsp of cinnamon
  • 1 tsp of baking powder
  • 1 packet of stevia

DIRECTIONS

  1. Preheat waffle maker and spray with non-stick cooking spray.
  2. Blend all ingredients in a blender until almost smooth.
  3. Measure out 3/4 cup of batter (or whatever your waffle maker can hold)
  4. Pour batter into waffle maker and cook. I cook mine on the highest setting and then I add 2 extra minutes to the cook time so I get crispy waffles. You will need to test your waffle maker to get the desired crispiness!
  5. Enjoy with fruit or peanut butter!
